Pedro Cat’s Famous Flan

(The secret to this flan is the cream cheese. If you want a lower fat content, you may eliminate the cheese.)

1/4 cup sugar
1 can Carnation evaporated milk
1 can Eagle brand sweetened milk
4 eggs
1/2 package of cream cheese
1 tablespoon vanilla

In a blender, blend all of the ingredients, except the sugar.

In a ring mold pan, melt the sugar over a stovetop. Stir constantly and rotate the pan until the sugar is melted and golden brown. Cool.

Add the liquid from the blender and cover well with aluminum foil.

Place the pan in a skillet large enough to hold the mold, and then add water to the skillet up to 1/3 of the side of the pan.*

Cook for one hour until an inserted knife comes clean. Serves 12.

* (Please note, you may have to add more water to the skillet.)
