Pollo Pibil (Yucatecan Chicken)

1 boneless, skinless chicken breast per person, or any pieces of chicken desired
banana leaves, steamed and soft
achiote
garlic
oregano
juice of a lime
juice of an orange
salt
tomato
red onion

Put all of the spices in a blender and blend until you have a thick, pancake batter type paste.

Marinate the chicken breasts in the paste for at least 30 minutes.

Adorn the marinated breasts with a tomato slice and thinly sliced red onion. Wrap them in banana leaves or aluminum foil.

Bake in Pyrex pan in a 350 degree oven until tender and completely cooked, about 30 minutes.
