In Mexico, one of the best known hot sauces is called pico de gallo which means “bite or beak of the rooster”. Xni-pec in Maya means “nose of the dog”.

white onions, chopped
chile habanero, chopped and added to taste
cilantro, chopped
juice of a lime to taste

Mix all ingredients together and salt to taste.
